Maldives Dried Ground Tuna Coarse
In the Maldives, tuna is traditionally caught in clear blue waters by pole and line, which ensures that you get the finest quality of tuna.
Every fish is gutted, skinned and cut in an age-old technique. The gills and some of the innards are discarded, the head and backbone removed, and the belly is separated. The fish is then divided into four longitudinal pieces called ari. For larger tunas these pieces can be cut into smaller sections (foti).
These tuna are then processed by boiling, smoking and sun-drying until they acquire a wooden appearance. These pieces of tuna are cut into small fillets and grind using grinding machine.
